How to handle server load during huge betting events

We are planning to cover some major sports tournaments next month and I am terrified that our servers will give up. Last time we had a surge of users during a big game, the site was lagging so badly that people couldn't even place their bets. What is the best way to prepare for these traffic peaks? Should we just buy more server space or is there a specific architectural fix that prevents this kind of overload?
