Is there a safe way to extract emails from Gmail for offline backup without using Google Takeout?

Hey all, I'm looking for a way to extract or export emails from my Gmail account for offline use. I know Google Takeout exists, but it's a bit clunky and slow for my needs, especially when I just want to grab specific labels or time ranges. Is there a mail extraction tool that can selectively pull messages from Gmail securely? Bonus if it can export in readable formats like PDF or EML.
